Grassfed Beef Ultimate Nachos

February 7, 2014

Grassfed-Beef-Ultimate-Nachos

Every once in awhile I get a nacho craving.. don’t we all? But I like to turn this high calorie snack into a protein-packed lunch.

It’s the ingredients that you choose for the nachos that make all the difference in the world. It’s so much better to go with REAL food instead of the overly processed garbage ingredients that fill our grocery stores aisle…

Why? Because REAL Food just tastes better!

Grassfed Beef Ultimate Nachos Recipe

Ingredients 1 bag Organic tortilla chips (Non-Gmo verified)
1 lb lean Beyond Organic Greenfed beef (bc it’s the best I have come across!)
1-2 T coconut oil
1 small onion, chopped
3-4 garlic cloves, minced
1/2 cup strained tomatoes
1/2 cup low sodium organic free-range chicken broth
2 teaspoons Terrain Oregano vinegar (or 1 tsp apple cider vinegar & 1/2 tsp oregano)
1/2 packet organic taco seasoning or if you don’t have that use these spices below…
2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon oregano
1/2 teaspoon black pepper
1 tsp sea salt

Nacho toppings
1 15-oz can black beans, drained
Shredded Beyond Organic raw cheese
1/2 cup halved grape tomatoes
Organic romaine, chopped
Organic green pepper, chopped
Organic salsa
Organic sour cream
2 Tbsp chopped fresh cilantro

Recipe
In a large skillet, heat oil over medium-low heat.
Add the minced onion and sauté until soft and starting to brown.
Add the garlic and stir around for just about 30 seconds.
Crumble the ground beef into the pan and stir in ingredients.
Cook for 10-15 minutes, until it’s nice and thick and happy.
Taste it and adjust your seasonings.
While the meat is cooking, prepare your toppings and spread tortilla chips evenly in a single layer on a large baking sheet.
You can get two good sized pans out of this recipe.
Spread the meat sauce sparingly over the chips.
Top with black beans.
Sprinkle shredded cheese generously on top of the meat and chips.
Bake 10-15 minutes at 350 degrees, or until cheese is evenly melted.
Remove from the oven and add your toppings.

Serve to your happy husband while he is watching football on Sunday.

You may get Wife of the Year Award… especially if you sit and watch football while stuffing your face with him!
