Slow cookers make dinner so much easier!
I love when I can pop some ingredients into a crockpot with little preparation and feel at peace the rest of the day knowing that a delicious home cooked dinner is already taken care of.
The smells that slowly fill my house as the hours pass by always gets my stomach growling and my mouth watering.
This recipe is so easy and so filling that the picky ones in your family won’t even complain about how healthy it is:)
Crockpot Lemon Dijon Chicken, Green Beans, & Potatoes Recipe
Ingredients
1.5-2 pounds organic boneless skinless chicken thighs
potatoes- quartered (or use baby potatoes)
10 cloves fresh garlic
1 lemon thinly sliced, seeds removed
1 large handful fresh haricot verts (French green beans)
organic baby carrots
2 cups reduced sodium chicken broth
2 T Bragg’s liquid aminos
1 shallot sliced- use onion if you don’t have one
1 teaspoon sea salt
1/2 teaspoon black pepper
2 tablespoons raw honey
2 tablespoons Dijon mustard
1/4 cup fresh chopped parsley
2 tablespoons fresh chopped thyme leaves or 1 T dried thyme
Recipe
Turn crock pot to the low setting.
Flavor the chicken thighs with salt & pepper.
Place chicken, potatoes, garlic, lemon, green beans, carrots, chicken broth, shallots, braggs, sea salt, and pepper into crock pot.
Cover and cook on low for 6-8 hours or you can choose to cook on high for 3-4 hours. Discard lemon slices.
Take out and shred chicken if you want or save time and keep them full size (what I plan on doing:)
Stir in honey and dijon.
Add parsley and thyme, stirring to combine.
Season with additional sea salt and pepper if needed.
The colors on your plate are fantastic! Serve the chicken, green beans, carrots, and potatoes over quinoa, brown rice, or just by itself.
