Mexican night made Healthy!
These turkey enchiladas are so satisfying, they have become a staple meal in my home. I love telling my husband we are having enchiladas tonight because the look on his face is pure happiness:)
I love this meal because I don’t feel like I need to cook anything else with it. To top it off, the leftovers taste just as delicious the next day.
Healthy Gluten-Free Turkey Enchiladas
Serves 4-6
1 pound lean ground turkey
6-8 brown rice Gluten-Free tortillas
Beyond Organic raw cheddar, shredded (sub with organic shredded cheese)
1 white onion, chopped
1 organic zucchini, shredded into small pieces
1/3 cup chopped green olives
2 T olive juice
1-2 jalapenos, seeded and chopped
1/2 cup organic tomato sauce
2 tsp cumin
1 T liquid Terrain Oregano (if you don’t have it, use 1 tsp dried oregano)
1/4 tsp sea salt
1/4 tsp cinnamon
Optional- Organic Sour Cream, Salsa, and Guacamole
Recipe
Preheat oven to 375 degrees.
In a large nonstick skillet saute onion in coconut oil for 5 min.
Add turkey, shredded zucchini, chopped green olives, olive juice, jalapeños, tomato sauce, cumin, oregano, sea salt, and cinnamon.
Cook 6-7 min, set aside.
Briefly warm 6-8 brown rice Gluten-Free tortillas just until soft.
Spoon 1/3 cup of turkey mixture down the center of a tortilla. Roll up and place seam side down in lightly greased baking dish. Repeat with remaining tortillas and filling.
Spoon more tomato sauce over enchiladas and sprinkle with organic shredded cheese Bake on bottom rack for 20-25 min.
Serve with organic sour cream, salsa, and guacamole on the side.
Light a candle, grab a margarita to sip with your enchiladas, and enjoy your Mexican night in!
