Cheesecake is one of my favorite desserts. I get excited every time I see it on a menu or at a party.
My mind can’t help but wonder about what ingredients the chef used and how fresh or processed it is. Luckily, these hesitations keep me from indulging way too much.
Now that I have this healthy recipe, I can have my own cheesecake–and eat it too!
I love that there is barely any sugar except for a touch of raw honey. You can experiment with this recipe and add fruit, nuts, or any other type of cheesecake your heart desires:)
Mini Paleo Cheesecake Bites
Homemade Chocolate-no sugar
2 tbs almond butter
3 tbs coconut oil
2 tbs raw unsweetened cacao powder
½ tsp vanilla
pinch of sea salt
1 tbs raw honey
Instructions
Stir chocolate ingredients until melted over stovetop. You may need to double the chocolate recipe if you like thinner cheesecake bites.
To make sweeter, add stevia.
Pour in silicon molds or in a small pan lined with parchment paper.
Put in freezer for 20 minutes while you make the filling.
Cheesecake Filling
8 oz. organic cream cheese- softened
¼ cup unsweetened coconut, UNTOASTED
¼ cup unsweetened coconut, TOASTED (6 min. at 400 degrees)
¼ cup coconut oil
1 tsp. vanilla extract
3 tbs. coconut flour
1-2 tbs raw honey
Pinch of sea salt
Cinnamon
Unsulphured dried bing cherries
Recipe
In a mixing bowl, whip cream cheese with a rubber spatula.
Add the toasted and untoasted coconut. Stir well.
Add salt, coconut flour, raw honey and vanilla extract.
Add the coconut oil last. Beat the mixture well.
Remove chocolate from freezer and add the cheesecake filling on top.
Place it back in the freezer and once hardened remove cheesecake bites from the silicone mold or if you used the pan, cut the cheesecake in squares.
Sprinkle cinnamon and add a cherry on top!

This will melt/soften quickly so just take out what you are eating immediately.
