When it comes to desserts I am not very picky, especially if I know it is made with healthy ingredients… I’m a stevia junkie and just happy to have something sweet!
My husband is the opposite. You would think I married a cookie connoisseur. He wants to enjoy his desserts to the max–all that matters is flavor. I have tried to fool him many times with my gluten free version of his favorite cookie but he immediately notices a difference in the first bite.
Finally, with these babies, I have found success! He loves them:) And because they are so easy and healthy, they will be a staple in our kitchen. Enjoy!
Ingredients
2.5 cups almond flour or almond meal
1/4 tsp sea salt
1/4 tsp baking soda
10 T organic pastured butter
1 T vanilla extract
1/4 cup xylitol
1 tsp organic stevia (I love Kal brand)
3 T coconut flour
1 T grapeseed oil
1 cup dark chocolate chunks
Instructions
Preheat oven to 350 degrees
1. Melt butter with stevia and xylitol slowly
2. Combine dry ingredients in a large bowl.
3. Mix wet ingredients into dry.
4. Form 1 inch balls and press onto parchment lined baking sheet.
5. Bake for 10 minutes.
Cool and serve!
